Premium Beef Shouldn’t
Mean Paying Retail Prices.

When you buy premium beef one package at a time, you pay retail markup on every cut. Buying in bulk lowers your overall average cost while giving you premium steaks, roasts, brisket, and ground beef in one freezer ready order. That difference adds up significantly over time.

Cut of Beef Long Island Retail Price per lb Bulk Purchasing Advantage Difference
Ribeye Steak $24 to $32 per lb Lower blended avg cost Significant
NY Strip Steak $20 to $28 per lb Lower blended avg cost Significant
Filet Mignon $35 to $55 per lb Lower blended avg cost Substantial

Hundreds to Thousands
What customers typically save compared to buying premium cuts individually at retail

Customers are consistently surprised by how much they save over time when they stop buying premium beef one package at a time from a supermarket and start purchasing directly from a butcher. The difference is not just in price. It is in quality, consistency and the satisfaction of knowing exactly where your beef came from.

0
Middlemen between you and your beef

No distributor. No broker. No grocery store markup. We source the animal and deliver it directly to you. Every layer we remove from that chain is value that comes back to you.

60 to 65%
Of hanging weight becomes your take home beef

After the animal is cut, trimmed and wrapped, your packaged yield is approximately 60 to 65% of the hanging weight. We are transparent about this so you know exactly what to expect. That yield still represents outstanding value compared to buying cuts retail one at a time.

Months
Of premium beef from a single order

A quarter cow stocks the average Long Island family's freezer for months. A half cow for close to a year. You make one decision, place one order, and stop thinking about the grocery store meat department for a long time.

Think about it differently

What Does Your Family Actually Spend on Beef Every Year?

Most Long Island families have no idea what they actually spend on beef. They buy a package here, a few steaks there, some ground beef every week. It adds up fast. And every dollar goes to a grocery store selling beef you know nothing about, not where it came from, not how it was handled, not who selected it.

What you get at the grocery store
Unknown
No information on the animal, the farm or how it was handled. Pre packaged, marked up at every step, and sold to you by someone who has never seen the inside of a processing facility.
What you get from Riverside Reserve
Everything.
A personally selected steer. Custom cut to your specifications. Vacuum sealed fresh and delivered to your door. You know the breed, the farm, the butcher and exactly how every cut was handled. That is the difference.
The real value
Quality + Control
You choose the thickness. You choose the lean ratio. You choose the roast size. Premium beef cut exactly the way your family eats it, delivered fresh and vacuum sealed. That level of customization and transparency does not exist at any grocery store at any price.

The question is not whether we are cheaper than the grocery store. The question is whether premium beef, custom cut by a master butcher and delivered to your door, is worth it to your family.

Splitting an order? We deliver to multiple addresses.
Two families splitting a whole cow is one of the most popular ways to order. We do not just split the beef, we separate each order individually, vacuum seal and label everything for each family, and deliver to both addresses. Each household gets their own delivery, their own cuts specified their own way, and pays their own share directly. No coordinating, no dividing at the door. We handle all of it.

Nothing to hide

Pure Meat.
Total Transparency.

We believe you have a right to know exactly what you are eating. Here is what we can tell you and what we stand behind.

No Injections for Water Weight

Unlike many supermarket meat products that are injected with saline solutions to add weight and extend shelf life, our meat is pure and nothing added.

No Mystery Sourcing

We personally select every animal. You know who chose your beef, who processed it and how it was handled from start to finish. That level of transparency does not exist at a grocery store.

No Bioengineering

Our meat is not bioengineered or genetically modified. Traditional American beef, pork, chicken raised and processed the right way.

No Fillers or Additives

What goes into your freezer is 100% of the kind of meat you ordered. No additives, no preservatives, no solutions. Just the meat cut and wrapped exactly as you specified.

No Middlemen Handling Your Food

From the farm to the processor to your door. We eliminate every unnecessary step and every unnecessary hand that touches your beef before it reaches your family.

Humanely Raised American Cattle

We source from American cattle raised on natural feed. No imported beef, no industrial feedlot mystery. Real animals raised the traditional way and processed close to home on Long Island.

The butcher's advantage

Why Riverside Reserve
Is Different

There are a lot of places to buy beef on Long Island. Here is why the source matters.

20 Years Behind the Block

This is not a startup and it is not a tech company selling beef. This is a working master butcher who has spent over two decades buying, grading and breaking down beef at every level of the industry. When we select your animal we know exactly what we are looking at before it ever becomes a cut on your plate.

Your Order Is Never Generic

Every single order at Riverside Reserve is handled individually. We are not a subscription box shipping the same package to thousands of people. Your animal is selected for you, cut to your specifications and delivered to your address. There is no version of this that is not personal.

Quality You Can Trace.

Every order comes with complete transparency from farm to freezer. We believe customers deserve to know where their beef comes from and how it's handled every step of the way.

Cut Exactly How You Eat

Ribeyes at one and a quarter inch? Burger patties instead of loose ground? Three pound roasts instead of five? You tell us and we do it. A butcher who listens to how your family actually cooks is what separates this from every other bulk beef option available.

Local. You Can Actually Call Us.

We are right here on Long Island. You are not emailing a warehouse in Nebraska and hoping someone responds. You have a direct line to the person who selected and processed your beef. That is a real relationship built on accountability, not just a transaction.

Vacuum Sealed Fresh. Never Pre Frozen.

Your beef arrives vacuum sealed and fresh. We do not freeze it before delivery. You put it in your freezer on your terms, knowing exactly how fresh it is when it gets there. That is something a grocery store or a big box delivery service cannot say.

Our story

Built by a Butcher.
Not a Brand Agency.

I have been behind a butcher block for over 20 years. I have done the retail side, the wholesale side, the buying and the logistics. Every part of this business. I know what a good animal looks like before it ever becomes a cut of beef.

What I kept seeing was families on Long Island paying $30 a pound for a ribeye at any retail store when I knew exactly what that same beef cost at the source. The markup was significant. And nobody in this area was offering families a better way.

Riverside Reserve Meats exists to change that. To take 20 years of expertise, real supplier relationships and a butcher's eye for quality and put all of it directly in service of your family. No middleman. No mystery. Premium beef purchased the smarter way.

The Butcher Behind the Brand
Common questions

Everything You
Need to Know

Do I need a special freezer?+
A quarter cow fits in a standard chest freezer around 4 to 6 cubic feet. A half cow needs 8 to 10 cubic feet which is a standard garage chest freezer available at Home Depot for around $150 to $200. A whole cow needs 18 to 22 cubic feet. We are happy to advise on exactly what you need before you commit to anything.
How long does the whole process take?+
From your deposit to delivery is typically 2 to 4 weeks depending on processing availability and scheduling. We will give you a specific timeline when you book. Most customers receive their order within 4 weeks.
Why do you require a deposit?+
A deposit allows us to reserve your animal, schedule processing, and ensure availability. Once your order is confirmed, the remaining balance is due before cutting and packaging begins.
What exactly is a quarter cow?+
A quarter cow is exactly half of what you get with a half cow. It gives you a proportional share of all the major primal cuts including steaks, roasts and ground beef. It is the ideal starting point for a family that wants to experience buying direct from a butcher without the larger freezer commitment. You receive the same quality and the same customization as our larger orders, just in a smaller quantity.
What is the actual take home weight?+
A live cattle that weighs around 1,370 lb will yield approximately 850 lb of hanging weight after dressing. Your packaged take home beef represents 60 to 65% of hanging weight after trimming and processing, which translates to approximately 510 to 550 lbs for a whole, 255 to 275 lbs for a half, and 125 to 140 lbs for a quarter (varies by animal). We are transparent about these numbers because we want you to order with accurate expectations.
Can I customize exactly how my beef is cut?+
That is one of the biggest advantages of buying directly from a butcher. You will complete a cut sheet specifying steak thickness, roast sizes, ground beef lean ratio, pack sizes and more. We cut it exactly the way your family eats. That level of customization does not exist when you buy from a supermarket.
Can I split an order with another family?+
Absolutely and it is one of the most popular ways people order. Two families splitting a whole cow is a great arrangement. Each family specifies their own cut preferences and the cost splits right down the middle. Just let us know when you reserve and we will coordinate everything.
Do you deliver to multiple addresses for a split order?+
Yes and this is one of the things that sets us apart. When two families split a whole or half cow we treat them as two separate orders. Each family fills out their own cut sheet, we vacuum seal and label each portion individually, and we deliver to both addresses on the same day. You each get a clean independent delivery with your cuts done exactly the way you want them. No splitting at the door, no confusion. Just two happy freezers.
How long does the beef stay good in the freezer?+
Butcher paper wrapped beef stays good for 6 to 9 months. Vacuum sealed beef lasts 18 to 24 months. We strongly recommend vacuum sealing for the longest possible freezer life and the best quality when you open each package months later.
Will you be carrying other meats besides beef?+
Yes. We are working on adding premium pork and chicken from trusted farm partners. If you want to be notified the moment those become available just mention it in your reservation form or send us a message directly.
